Method

Collard Greens Preparation

    Prepare the Collard Greens

    Wash the collard greens thoroughly under cold water, remove the tough stems, and chop the leaves into bite-sized pieces.

    Cook the Beef Bacon

    In a large pot, cook the beef bacon over medium heat until crispy. Remove from the pot and set aside, leaving the rendered fat in the pot.

    Sauté the Greens

    Add olive oil to the pot with the bacon fat and heat over medium heat. Add the chopped collard greens, salt, and pepper. Sauté for about 5 minutes until they start to wilt.

    Add Chicken Broth

    Pour in the chicken broth and bring to a simmer. Cook for 30-40 minutes until the greens are tender.

    Combine with Bacon

    Once the greens are cooked, chop the crispy beef bacon and stir it back into the pot. Mix well and adjust seasoning if necessary.

Candied Cipollini Preparation

    Prepare the Cipollini Onions

    Peel the cipollini onions and set them aside.

    Cook the Onions

    In a small saucepan, combine the cipollini onions, brown sugar, butter, balsamic vinegar, and water. Bring to a boil over medium heat.

    Simmer

    Reduce the heat to low and simmer for about 20 minutes, or until the onions are tender and the liquid has thickened into a syrup.

Roasted Garlic Preparation

    Prepare the Garlic

    Preheat your oven to 400°F (200°C). Cut the tops off the garlic bulbs to expose the cloves.

    Roast the Garlic

    Drizzle olive oil over the exposed cloves, sprinkle with salt, and wrap each bulb in aluminum foil. Roast in the preheated oven for 30-35 minutes until the cloves are soft and caramelized.

    Cool and Extract

    Once roasted, allow the garlic to cool slightly, then squeeze the cloves out of their skins into a bowl. Mash with a fork and set aside.
