Preparation of Crabs

Soak the Crabs
In a bowl, soak the soft shell crabs in buttermilk for at least 30 minutes to help tenderize and flavor the crabs.

Prepare the Breading
In a separate bowl, mix together all-purpose flour, cornstarch, paprika, garlic powder, salt, and black pepper until well combined.

Dredge the Crabs
Remove the crabs from the buttermilk, allowing excess liquid to drip off. Dredge each crab in the breading mixture, ensuring they are fully coated on both sides.
Frying

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Crabs
Carefully add the breaded crabs to the hot oil, frying them for about 3-4 minutes on each side, or until they are golden brown and crispy. Fry in batches if necessary to avoid overcrowding.

Drain the Crabs
Once cooked, remove the crabs with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Serve the soft shell crabs immediately, garnished with lemon wedges and a side of tartar sauce for dipping.
