Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with flour, tapping out any excess.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the unsweetened chocolate and unsalted butter. Melt them together in a microwave in 30-second intervals, stirring in between, until smooth and fully melted.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, large egg yolks, and vanilla extract until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg mixture, stirring continuously to combine.

  5. 5

    Add Dry Ingredients

Gently fold in the all-purpose flour and a pinch of salt until just combined. Be careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

  2. 7

    Bake the Cakes

Place the ramekins onto a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1 minute.

  4. 9

    Serve

Carefully invert each ramekin onto a plate. Dust the tops with powdered sugar and serve immediately with a scoop of vanilla ice cream.
