Preparing the Shrimp

    Marinate the Shrimp

    In a large bowl, combine the peeled and deveined shrimp with buttermilk. Let it marinate for at least 30 minutes.

    In a separate bowl, mix together the flour, cornmeal, Cajun seasoning, salt, and pepper.

    Coat the Shrimp

    After marinating, remove the shrimp from the buttermilk, letting the excess drip off. Dredge each shrimp in the flour mixture until evenly coated.

Frying the Shrimp

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Assembling the Po' Boy

    Slice the French bread or hoagie rolls lengthwise without cutting all the way through.
