Clean the Oysters
Rinse the fresh oysters under cold running water to remove any dirt or debris. Scrub the shells gently with a brush to ensure they are clean.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold beer to the dry ingredients, whisking until you achieve a smooth batter.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and float.

Batter the Oysters
Dip each cleaned oyster into the batter, ensuring they are fully coated.

Fry the Oysters
Carefully place the battered oysters into the hot oil, a few at a time, avoiding overcrowding the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the fried oysters from the oil and transfer them to a plate lined with paper towels to drain excess oil.
