Calamari Preparation

Prepare the Calamari
Rinse the cleaned calamari under cold water and pat dry with paper towels. Slice the calamari into rings and set aside.

Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to combine.

Coat the Calamari
Dip the calamari rings into the egg mixture, then dredge them in the flour mixture until fully coated. Shake off any excess flour.
Frying

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test if the oil is ready by dropping a small piece of bread into it; if it sizzles and turns golden, the oil is ready.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry them for about 2-3 minutes or until they are golden brown and crispy. Do not overcrowd the pan.

Drain the Calamari
Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to absorb excess oil.

Once all calamari are fried, arrange them on a serving platter. Add lemon wedges and serve with tartar sauce on the side.
