    Prep the Seafood

    Rinse the shrimp, mussels, squid, and fish fillets under cold water. Remove any shells from the shrimp and mussels, and slice the squid into rings. Cut the fish fillets into bite-sized pieces.

    Chop Vegetables

    Chop the onion, bell pepper, and tomatoes. Mince the garlic and chop the cilantro.

    In a large skillet or paella pan, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until softened.
