Caramel Preparation
Make the Caramel
In a medium saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar is dissolved.
Cook the Caramel
Allow the mixture to boil without stirring until it turns a golden amber color, about 10 minutes. Remove from heat immediately to prevent burning.
Coat the Baking Dish
Quickly pour the caramel into a round 9-inch cake pan, swirling to coat the bottom evenly. Set aside to cool and harden.

Prepare the Flan Mixture
In a large mixing bowl, crack the eggs and beat them lightly. Add the sweetened condensed milk, evaporated milk, and vanilla extract.
Blend the Mixture
Using a hand blender or whisk, mix until well combined and smooth. Be careful not to create too many bubbles.
Pour into Caramelized Pan
Pour the flan mixture over the hardened caramel in the cake pan.
Baking
Prepare the Water Bath
Preheat the oven to 350°F (175°C). Place the cake pan in a larger baking dish and fill the outer dish with hot water until it reaches halfway up the sides of the flan pan.
Bake the Flan
Bake in the preheated oven for about 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.
Cool the Flan
Remove the flan from the oven and let it cool in the water bath for 10 minutes, then remove from the water and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.
