Dough Preparation
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.
Cream Butter and Sugar
In a separate bowl, beat the unsalted butter and granulated sugar together until light and fluffy, about 3-5 minutes.
Incorporate Eggs and Vanilla
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Prepare for Baking
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Bake the Cakes
Divide the dough evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Filling Preparation
Prepare the Filling
In a mixing bowl, combine the ricotta cheese, powdered sugar, lemon zest, and lemon juice. Mix until smooth and creamy.
Add Cherries
Fold in the pitted and halved cherries gently into the ricotta mixture.
Assembly
Layer the Cakes
Once the cakes are completely cool, place one layer on a serving platter. Spread half of the ricotta filling over the first layer.
Add Second Layer
Place the second cake layer on top of the filling and spread the remaining ricotta mixture on top.
Top with Whipped Cream
Spread whipped cream over the top of the torta and garnish with fresh mint leaves.
