Method

Pork Preparation

  1. 1

    Season the Pork

In a bowl, mix together salt, black pepper, cumin, oregano, garlic powder, and onion powder. Rub this mixture all over the pork shoulder.

  2. 2

    Slow Cook the Pork

Place the seasoned pork shoulder in a slow cooker. Pour in the lime juice, orange juice, and chicken broth. Add the bay leaves. Cover and cook on low for 8 hours or until the pork is tender and can be shredded easily.

  3. 3

    Shred the Pork

Once cooked, remove the pork from the slow cooker and let it rest for a few minutes. Shred the pork using two forks, discarding any large pieces of fat. Return the shredded pork to the slow cooker to soak up the juices.

Taco Assembly

  1. 4

    Warm the Tortillas

In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, until they are pliable.

  2. 5

    Assemble the Tacos

Place some shredded carnitas on each tortilla. Top with chopped onion, chopped cilantro, and sliced jalapeños.

  3. 6

    Serve with Lime

Serve the tacos with lime wedges and a dollop of sour cream on the side.
