Marinade Preparation

In a large bowl, combine the pineapple juice, minced garlic, dried oregano, ground cumin, chili powder, salt, black pepper, apple cider vinegar, olive oil, and ancho chili powder. Mix well until all ingredients are blended.

Cut the pork shoulder into small chunks and add it to the marinade. Ensure all pieces are well-coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to infuse.
Cooking the Pork

Preheat your grill or stovetop grill pan over medium-high heat. Remove the pork from the marinade, letting any excess drip off.

Place the marinated pork on the grill and cook for about 8-10 minutes on each side or until the meat is cooked through and has a nice char. The internal temperature should reach 145°F (63°C).

Once cooked, remove the pork from the grill and let it rest for about 5 minutes before slicing it thinly.
Assembling the Tacos

Warm the corn tortillas on the grill for about 30 seconds on each side until pliable.

To assemble, place a few slices of the grilled pork on each tortilla.

Serve the tacos with lime wedges on the side for squeezing over the top.
