    Prepare Ingredients

    Gather all ingredients. If using meat, ensure it is cooked and shredded or crumbled as needed. Dice the bell peppers and onion, and slice the jalapeños.

    Mix Seasoning

    In a small bowl, mix together the ground cumin, paprika, salt, and black pepper. Set aside.

Cooking

    Heat Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté Vegetables

    Add the diced onion and bell peppers to the skillet. Sauté for about 3-4 minutes until they are soft.

    Add Meat and Seasoning

    If using meat, add the shredded chicken, ground beef, or crumbled chorizo to the skillet along with the mixed seasoning. Stir to combine and cook for another 3-5 minutes until heated through.

    Assemble Quesadillas

    On one half of each tortilla, layer a mixture of cheese, the cooked meat and vegetable mixture, and jalapeños (if using). Fold the tortillas in half.

    Cook Quesadillas

    In the same skillet, place the folded quesadillas. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.

Serving

    Slice and Serve

    Remove the quesadillas from the skillet, slice them into wedges, and serve hot with salsa or sour cream if desired.
