Pork Carnitas Preparation

Prepare the Pork
Place the pork shoulder in a slow cooker.

Add Ingredients
Pour the orange juice and lime juice over the pork. Add minced garlic, cumin, oregano, salt, black pepper, bay leaves, and water.

Cook
Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker, discard the bay leaves, and shred the pork using two forks.

Reduce Liquid
Optional: Strain the cooking liquid and reduce it in a saucepan over medium heat until thickened. Mix with the shredded pork for extra flavor.

Heat the Pan
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Assemble Quesadilla
Place one tortilla in the skillet, layer half of the shredded cheese on one half of the tortilla, and top with a generous portion of pulled pork and some chopped cilantro.

Fold and Cook
Fold the tortilla over to cover the filling. Cook for 3-4 minutes or until the bottom is golden brown and the cheese has melted.

Flip and Cook
Carefully flip the quesadilla and add another tablespoon of olive oil if needed. Cook the other side for an additional 3-4 minutes until golden brown.

Serve
Remove from skillet, cut into wedges, and serve with sour cream and salsa on the side.
