Preparation of Steak

    Marinate the Steak

    In a bowl, combine garlic powder, cumin, chili powder, salt, and black pepper. Rub the mixture onto the skirt steak evenly. Let it marinate for at least 30 minutes at room temperature or up to overnight in the refrigerator.

    Cook the Steak

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the marinated steak and cook for 4-5 minutes on each side or until it reaches your desired doneness. Remove from the skillet and let it rest for 5 minutes before slicing thinly against the grain.

Assembling the Quesadilla

    Prepare Quesadilla

    In the same skillet, add another tablespoon of olive oil and reduce heat to medium. Place one tortilla in the skillet and sprinkle half of the shredded cheese evenly over it. Add a portion of the sliced steak on top of the cheese, then sprinkle the remaining cheese over the steak. Top with another tortilla.

    Cook the Quesadilla

    Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side until golden brown and the cheese is fully melted.

    Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve with sour cream, salsa, chopped cilantro, and sliced jalapeños on the side.
