Prepare the Dough

Boil Water
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once the mixture is boiling, remove it from heat and stir in 1 cup of all-purpose flour until well combined. The dough will be thick and form a ball.

Incorporate Eggs
Allow the dough to cool for about 5 minutes. Then, add 2 large eggs, one at a time, mixing well after each addition until the dough is smooth and shiny.

Prepare for Frying
Transfer the dough into a piping bag fitted with a large star tip for shaping the churros.
Fry the Churros

Heat the Oil
In a large deep pot, pour in 4 cups of vegetable oil and heat it to 350°F (175°C). Use a thermometer for accuracy.

Once the oil is hot, carefully pipe 4-6 inch long strips of dough directly into the hot oil, cutting them with scissors. Do not overcrowd the pan.
