Cooking the Carnitas

Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a large bowl, combine the salt, black pepper, cumin, and oregano. Rub this spice mixture all over the pork chunks.

Sear the Pork
In a large skillet over medium-high heat, sear the seasoned pork chunks on all sides until browned, about 3-4 minutes per side. Transfer the pork to a slow cooker.

Add Aromatics
In the same skillet, add chopped garlic and diced onion, sautéing for about 2-3 minutes until softened. Add to the slow cooker.

Add Liquids
Pour the orange juice and lime juice over the pork in the slow cooker. Add the bay leaves.

Cook the Pork
Cover and cook on low for 8 hours or until the pork is fork-tender. Alternatively, cook on high for 4-5 hours.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any large pieces of fat and bay leaves.

Crisp the Pork (Optional)
For extra flavor and texture, spread the shredded pork on a baking sheet and broil in the oven for 5-7 minutes until crispy.

Warm the Tortillas
In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Serve with Lime
Serve the tacos with lime wedges on the side for squeezing over the top.
