Prepare Pork Carnitas

Sear the Pork
In a large skillet over medium-high heat, sear the pork shoulder on all sides until browned (about 4-5 minutes per side).

Slow Cook the Pork
Transfer the seared pork to a slow cooker. Add orange juice, lime juice, garlic cloves, cumin, oregano, salt, and pepper. Cover and cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and let it cool slightly. Shred the pork using two forks, then return it to the slow cooker to soak up the juices.

Prepare the Filling
In a bowl, mix the cooked white rice, black beans, and shredded cheese until well combined.

Fill the Tortillas
Lay a large flour tortilla on a flat surface. Add a generous amount of the rice and bean mixture, followed by shredded carnitas and a dollop of guacamole.

Wrap the Burrito
Fold the sides of the tortilla over the filling and then roll it from the bottom up to enclose the filling completely.

Serve
Cut the burrito in half and serve with additional guacamole or your favorite salsa.
