In a medium saucepan, combine 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Prepare the Beans
Open the can of black beans and drain the liquid. Rinse the beans under cold water and pour them into a small saucepan. Add cumin and salt to taste. Heat over medium heat until warmed through, about 5 minutes.

Cook the Meat
In a large skillet, cook the ground beef or chicken over medium heat until browned and fully cooked, approximately 7-10 minutes. Drain excess fat if necessary. Stir in taco seasoning and follow package instructions, usually adding a little water and simmering for a few minutes.

Assemble the Burritos
Lay a large flour tortilla flat on a clean surface. In the center, layer a scoop of rice, a scoop of black beans, and a portion of the cooked meat. Top with shredded cheese, sour cream, chopped lettuce, and diced tomato.

Fold the sides of the tortilla over the filling, then roll from the bottom up to create a burrito shape. Ensure that the filling is securely wrapped inside.
