Marinated Pork

Prepare the Marinade
In a blender, combine pineapple juice, apple cider vinegar, guajillo chilies, ancho chilies, garlic cloves, oregano, cumin, salt, and black pepper. Blend until smooth.

Cook the Pork
Preheat the oven to 300°F (150°C). Remove the pork from the marinade and place it on a baking sheet. Drizzle with olive oil and roast in the oven for about 3 hours or until the pork is tender and easily pulls apart. Let it rest before shredding.
Rice and Beans

Cook the Rice
In a medium saucepan, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent. Add the rice and stir for 2-3 minutes. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.

Add the Beans
Once the rice is cooked, stir in the drained black beans, chopped cilantro, lime juice, and salt. Mix well and let it sit covered for an additional 5 minutes to heat through.

Assemble the Burritos
Warm the flour tortillas in a dry skillet or microwave. Layer shredded pork, rice and beans mixture, sliced avocado, sour cream, and salsa onto each tortilla. Roll tightly to form burritos.

Serve
Cut the burritos in half if desired and serve warm with additional salsa or toppings of choice.
