Method
Preparation
- 1
Prepare the Filling
In a medium saucepan over medium heat, warm the refried beans until heated through, stirring occasionally for about 5 minutes.
- 2
Grate the Cheese
If not using pre-shredded cheese, grate the cheese of your choice (cheddar, Monterey jack, or a blend) using a box grater.
- 3
Prepare the Tortillas
Heat the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, just until warm and pliable.
Assembly
- 4
Assemble the Burritos
On each tortilla, spread about half a cup of warm refried beans, followed by a sprinkle of shredded cheese and a couple of tablespoons of salsa.
- 5
Wrap the Burritos
Fold the sides of the tortilla inward over the filling, then roll the burrito tightly from the bottom up to enclose the filling.
Serving
- 6
Serve the Burritos
Cut the burritos in half if desired and serve warm with optional garnishes such as sour cream, chopped cilantro, and sliced jalapeños on the side.
