Method

Marinade Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine lime juice, olive oil, minced garlic, cumin powder, chili powder, salt, black pepper, and chopped cilantro. Whisk together until well blended.

  2. 2

    Marinate the Beef

Place the flank steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.

Grilling the Beef

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 4

    Grill the Steak

Remove the flank steak from the marinade and let any excess drip off. Grill the steak for about 6-8 minutes per side, or until it reaches the desired level of doneness. Use a meat thermometer to check for an internal temperature of 135°F for medium-rare.

  3. 5

    Rest the Meat

Once cooked, remove the steak from the grill and let it rest for about 10 minutes before slicing.

Taco Assembly

  1. 6

    Slice the Beef

Slice the grilled flank steak against the grain into thin strips.

  2. 7

    Assemble the Tacos

Warm the corn tortillas on the grill for about 30 seconds on each side. To assemble, place a few slices of beef in the center of each tortilla. Top with diced onion, chopped cilantro, and a spoonful of salsa.

  3. 8

    Serve

Garnish the tacos with lime wedges and serve immediately.
