Cook the Rice
In a medium saucepan, combine the white rice with 2 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes until the water is absorbed and the rice is tender. Remove from heat and let it sit, covered, for another 5 minutes.

Prepare the Chicken
While the rice is cooking, heat the olive oil in a skillet over medium heat. Season the boneless chicken breasts with salt and black pepper. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

Chop the Vegetables
Dice the tomato and onion, and chop the lettuce into bite-sized pieces. Set aside.

Assemble the Burrito
Lay a flour tortilla flat on a clean surface. Start by adding a scoop of cooked rice, followed by a scoop of black beans, sliced chicken, diced tomato, onion, and lettuce. Finally, top with salsa.

Roll the Burrito
Fold in the sides of the tortilla and roll tightly from the bottom to the top to enclose the filling. Repeat with the remaining tortillas and filling.

Cut the burritos in half if desired and serve with extra salsa on the side.
