Preparing the Carnitas

    Prepare the Pork

    Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano.

    Sauté Aromatics

    In a large pot or Dutch oven, heat a little oil over medium heat. Add minced garlic and chopped onion, sautéing until softened and fragrant.

    Add Pork and Liquid

    Add the seasoned pork chunks to the pot and pour in the orange juice. Add bay leaves.

    Cook the Pork

    Cover the pot and cook on low heat for about 3-4 hours, or until the pork is tender and easily shreds with a fork.

    Shred the Pork

    Remove the pork from the pot, shred it with two forks, and return it to the pot to soak in the juices for about 10 minutes.

Assembling the Burrito

    Cook the Rice

    Cook the rice according to package instructions. Set aside.

    Prepare the Beans

    Heat the black beans in a small pot over low heat until warm.

    Warm the Tortillas

    In a dry skillet, warm the tortillas over medium heat for about 30 seconds on each side until pliable.

    Assemble the Burrito

    On each tortilla, layer a portion of the shredded carnitas, rice, black beans, shredded cheese, sour cream, and fresh cilantro. Squeeze lime juice over the filling.

    Wrap the Burrito

    Fold in the sides of the tortilla and then roll from the bottom to the top to fully enclose the filling.
