Preparing the Vegetable Skewers

Cut the Vegetables
Chop the bell peppers, zucchini, and red onion into bite-sized pieces. Leave the cherry tomatoes whole.

Marinate the Vegetables
In a large bowl, combine the chopped vegetables with olive oil, garlic powder, paprika, salt, and black pepper. Toss well to ensure all vegetables are coated in the marinade. Let it sit for at least 15 minutes.

Assemble the Skewers
Thread the marinated vegetables onto the skewers, alternating between different types for a colorful presentation. Aim to fill each skewer with a variety of vegetables.

Grill the Skewers
Preheat your grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.

Rinse the Rice
Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

In a medium saucepan, add the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed.

On a serving platter, create a bed of fluffy basmati rice. Place the cooked veggie skewers on top and serve immediately.
