Cooking Couscous

    Prepare the Couscous

    In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, olive oil, and salt. Remove from heat, cover, and let it sit for about 5 minutes.

    Fluff the Couscous

    After 5 minutes, remove the lid and fluff the couscous with a fork. Set aside.

Cooking Vegetables

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add Remaining Vegetables

    Add the diced zucchini, bell pepper, carrot, and cherry tomatoes to the skillet. Sauté for 5-7 minutes until the vegetables are tender.

    Add Spinach

    Stir in the chopped spinach and cook for another 2-3 minutes until wilted.

Combining Ingredients

    Mix Couscous and Vegetables

    Combine the fluffed couscous with the sautéed vegetables in the skillet. Stir well to mix everything together.

    Season the Dish

    Add black pepper, paprika, and chopped parsley to the mixture. Stir to combine and adjust seasoning to taste.
