Method
Prepare the Gyros Meat

Mix the Meat
In a large mixing bowl, combine the ground lamb, ground beef, minced garlic, chopped onion, oregano, cumin, salt, and black pepper. Mix until well combined.

Shape the Meat
Shape the mixture into thin patties or logs, about 1/2 inch thick.

Prepare the Tzatziki Sauce

Combine Ingredients
In a medium bowl, mix together the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and black pepper. Stir until well combined.

Chill the Sauce
Cover and refrigerate the tzatziki sauce for at least 30 minutes to allow the flavors to meld.
Assemble the Sandwich

Prepare the Pita
Lightly toast the pita bread if desired. Place one piece of pita on a plate.

Add Gyros Meat
Slice the cooked gyros meat and place a generous amount on top of the pita.

Layer the Vegetables
Top the gyros meat with shredded lettuce, diced tomato, diced cucumber, sliced black olives, and crumbled feta cheese.

Finish with Tzatziki
Drizzle or dollop the chilled tzatziki sauce on top of the sandwich.
