Marinating the Chicken

    In a bowl, combine minced garlic, ground cumin, ground coriander, ground paprika, ground turmeric, olive oil, lemon juice, salt, and black pepper.

    Add the boneless chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Cooking the Rice

    Rinse the Rice

    Thoroughly rinse the basmati rice under cold water until the water runs clear to remove excess starch.

    In a pot, combine the rinsed rice, water, salt, and olive oil. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the rice is tender.

    Remove the pot from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
