    Prepare Chickpeas

    Soak the dried chickpeas in water for at least 8 hours or overnight. Drain and rinse.

    Make Falafel Mixture

    In a food processor, combine the soaked chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Process until a coarse mixture forms.

    Form Falafel Balls

    Shape the mixture into small balls or patties.

    Fry Falafel

    In a deep skillet, heat vegetable oil over medium-high heat. Fry the falafel balls in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Grape Leaves

    Prepare Filling

    In a bowl, mix the uncooked rice, chopped onion, dill, lemon juice, and salt.

    Stuff Grape Leaves

    Lay a grape leaf stem-side up, place about 1 tablespoon of the filling at the base, and fold in the sides, then roll tightly.

    Cook Grape Leaves

    Place the stuffed grape leaves in a pot, add water to cover, and simmer on low heat for about 30-40 minutes until the rice is cooked.

Tzatziki Sauce

    Prepare Tzatziki

    In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, dill, salt, and black pepper. Mix until well combined.

Pita Bread

    Serve Pita Bread

    Warm the pita bread in a dry skillet or microwave before serving.
