In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and black pepper. Add the beef sirloin and lamb shoulder, ensuring they are well coated. Let marinate for at least 30 minutes.

Preheat the oven to 400°F (200°C). Place the marinated beef and lamb on a baking sheet and roast for about 25-30 minutes or until the internal temperature reaches 145°F (63°C) for medium-rare. Remove from oven and let rest for 10 minutes before slicing thinly.

In a small bowl, mix Greek yogurt, lemon juice, minced garlic, chopped dill, and salt until well combined. Refrigerate until ready to use.
