In a small bowl, combine warm water (100°F to 110°F) with sugar and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

In a large mixing bowl, combine the all-purpose flour and salt. Mix well.

Make a well in the center of the flour mixture, then pour in the activated yeast mixture and olive oil. Stir with a wooden spoon until the dough starts to come together.

Shaping and Baking

Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat up.

Once the dough has risen, punch it down and transfer it to a floured surface. Divide the dough into 8 equal pieces.

Roll each piece into a ball, then flatten it into a circle about 1/4 inch thick. Make sure they are even in thickness for proper puffing.
