    Prepare the Ingredients

    Chop the onions, slice the carrots, dice the zucchini, and mince the garlic. Set aside.

    Prepare the Lamb

    Cut the lamb shoulder into chunks and season with salt, black pepper, and cayenne pepper (if using).

Cooking

    Sear the Lamb

    In a large tagine or heavy pot, heat olive oil over medium-high heat. Add the lamb chunks and sear on all sides until browned. Remove and set aside.

    Cook the Vegetables

    In the same pot, add the chopped onions and sauté until translucent. Add the minced garlic, carrots, and zucchini, and cook for another 5 minutes.

    Add Spices and Liquid

    Stir in the ground cumin, ground coriander, ground cinnamon, and paprika. Cook for 1-2 minutes until fragrant. Then, add the diced tomatoes and chicken broth (or water).

    Combine and Simmer

    Return the browned lamb to the pot. Add the chopped dried apricots. Stir well, cover, and reduce heat to low. Allow to simmer for 2-3 hours, or until lamb is tender.

    Once cooked, taste and adjust seasoning if necessary. Garnish with toasted almonds and fresh cilantro or parsley before serving.
