Add Tomatoes and Spices
Stir in the diced tomatoes, cumin, coriander, cinnamon, salt, and black pepper. Cook for another 3 minutes, allowing the spices to bloom.

Simmer the Stew
Return the browned lamb to the pot. Pour in the vegetable broth, bring the mixture to a boil, then reduce heat to low and cover. Let it simmer for 1.5 to 2 hours until the lamb is tender.

Finish and Garnish
Once the lamb is cooked, taste and adjust seasoning if necessary. Garnish with chopped parsley before serving.
Couscous Preparation

Boil Water
In a separate saucepan, bring 1.5 cups of water to a boil. Add 0.5 teaspoons of salt and 1 tablespoon of olive oil.

Cook Couscous
Once the water is boiling, remove it from heat and stir in 1 cup of couscous. Cover the saucepan and let it sit for 5 minutes.

Fluff Couscous
After 5 minutes, uncover and fluff the couscous with a fork. It should be light and fluffy.
