Preparation of Falafel Mixture

    Soak Chickpeas

    Place the dried chickpeas in a bowl, cover with water and soak overnight (about 8 hours). Drain and rinse before use.

    Blend Ingredients

    In a food processor, combine soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but combined (do not over-blend).

    Chill Mixture

    Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes to firm up.

Frying

    Form Falafel Balls

    Once chilled, use your hands to form the mixture into small balls or patties, about 1.5 inches in diameter.

    Heat Oil

    In a frying pan, heat vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry Falafel

    Carefully add the falafel balls to the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown.

    Drain and Serve

    Using a slotted spoon, remove the falafel from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot.
