Pancake Batter

Method

Prepare the Pancake Batter

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, 2 tablespoons of sugar, and 1 teaspoon of salt. Whisk together until well combined.

  2. 2

    Mix Wet Ingredients

In a separate bowl, whisk together 1.5 cups of milk, 2 large eggs, and 4 tablespoons of melted butter until smooth.

  3. 3

    Combine

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.

Cook the Pancakes

  1. 4

    Preheat the Griddle

Heat a non-stick griddle or frying pan over medium heat. You can lightly grease it with butter or cooking spray.

  2. 5

    Pour Batter

Using a ladle or cup, pour about 1/4 cup of pancake batter onto the griddle for each pancake.

  3. 6

    Cook

Cook the pancakes for about 2-3 minutes or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown.

  4. 7

    Repeat

Continue the process until all the batter is used, keeping the cooked pancakes warm in a low oven if necessary.

Serve

  1. 8

    Plate

Stack the pancakes on a plate.

  2. 9

    Add Toppings

Top with maple syrup, fresh berries, and whipped cream as desired.
