    Blend the Ingredients

    In a food processor, combine the chickpeas, tahini, garlic, olive oil, lemon juice, ground cumin, salt, and water. For the spicy version, add red pepper flakes.

    Process Until Smooth

    Blend the mixture until smooth and creamy. If the hummus is too thick, add more water, one tablespoon at a time, until desired consistency is reached.

Moroccan Eggplant Dip

    Prepare the Eggplant

    Preheat the oven to 400°F (200°C). Cut the eggplant in half lengthwise and score the flesh with a knife. Drizzle with olive oil and sprinkle with salt.

    Roast the Eggplant

    Place the eggplant halves on a baking sheet, cut side down. Roast in the oven for about 30-35 minutes, or until the flesh is soft and tender.

    Blend the Dip

    Once roasted, scoop the flesh out of the eggplant and place it in a food processor. Add garlic, ground cumin, olive oil, lemon juice, and salt. Blend until smooth.

    Garnish

    Transfer the dip to a serving bowl and garnish with fresh parsley.

    Prepare the Platter

    Arrange the hummus, Moroccan eggplant dip, cherry tomatoes, and pita bread or crackers on a serving platter.
