Preparation
- 1
Marinate the Lamb
In a mixing bowl, combine olive oil, minced garlic, chopped fresh rosemary, chopped fresh thyme, salt, black pepper, and lemon juice. Whisk together until well blended.
- 2
Coat the Lamb Chops
Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the chops, making sure they are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
Grilling
- 3
Preheat the Grill
Preheat your grill to medium-high heat, approximately 400°F (200°C).
- 4
Grill the Lamb Chops
Remove the lamb chops from the marinade and allow excess marinade to drip off. Place the chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.
- 5
Rest and Serve
Once cooked, remove the lamb chops from the grill and let them rest for about 5 minutes before serving. This helps the juices redistribute for a tender bite.
