Preparing the Marinade

    Make the Marinade

    In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper. Whisk until well combined.

Marinating the Chicken

    Marinate the Chicken

    Cut the boneless chicken thighs into 1-inch cubes and add them to the marinade. Stir to coat the chicken evenly, cover the bowl with plastic wrap, and refrigerate for at least 1 hour, preferably overnight.

Preparing the Rice

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add the basmati rice and salt. Reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Grilling the Kebabs

    Prepare the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.

    Assemble the Kebabs

    Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece.

    Grill the Kebabs

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Serving

    Serve the Kebabs

    Remove the kebabs from the grill and let them rest for a couple of minutes. Serve the chicken kebabs with the cooked basmati rice on the side.
