Grape Leaves Filling
Grape Leaves Preparation
Method
Grape Leaves Filling
- 1
Prepare the Rice
In a medium bowl, rinse the long-grain rice under cold water until the water runs clear. Drain and set aside.
- 2
Cook the Filling
In a large skillet over medium heat, add olive oil and chopped onion. Sauté until the onion is translucent, about 5 minutes. Add ground beef or lamb and cook until browned, breaking it apart with a spoon, about 7-10 minutes.
- 3
Mix the Filling
Stir in the rinsed rice, chopped parsley, dill, tomato paste, salt, black pepper, and lemon juice. Mix well and remove from heat. Allow the mixture to cool slightly.
Grape Leaves Preparation
- 4
Prepare the Grape Leaves
Open the jar of canned grape leaves and carefully separate them. Rinse under cold water to remove excess brine and pat dry with paper towels.
- 5
Stuff the Grape Leaves
Take one grape leaf, vein side up, and place about 1 tablespoon of the filling at the base of the leaf. Fold the sides over the filling and roll from the base to the tip, making a tight roll. Repeat with remaining leaves and filling.
- 6
Cook the Grape Leaves
In a large pot, arrange the stuffed grape leaves seam side down in a single layer. Pour water or broth over the stuffed leaves until they are just covered. Place a plate on top to keep them submerged and bring to a gentle simmer. Cover and cook for 45 minutes.
- 7
Serve
Once cooked, remove from heat and let sit for 10 minutes before serving. Drizzle with olive oil and lemon juice, if desired.
