Method

Meat Preparation

  1. 1

    Prepare the Meat

In a food processor, combine the lamb shoulder, ground beef, garlic cloves, onion, oregano, cumin, salt, and black pepper. Process until the mixture is well combined and has a smooth texture.

  2. 2

    Shape the Meat

Transfer the meat mixture to a loaf pan and press it down firmly. Cover with plastic wrap and refrigerate for at least 2 hours or overnight for the best results.

  3. 3

    Cook the Meat

Preheat the oven to 350°F (175°C). Bake the meat for 60 minutes or until fully cooked. You can also grill or pan-sear the meat if preferred.

  4. 4

    Slice the Meat

Once cooked, allow the meat to rest for 10 minutes. Then, slice it thinly against the grain.

Sauce Preparation

  1. 5

    Make the Sauce

In a bowl, combine Greek yogurt, grated cucumber, minced garlic clove, lemon juice, dill, and salt. Mix well until smooth and refrigerate until serving.

Assembling the Gyro

  1. 6

    Prepare the Pita

Warm the pita bread in a dry skillet or microwave until soft.

  2. 7

    Assemble the Gyro

On each pita, layer the sliced gyro meat, chopped tomato, shredded lettuce, and thinly sliced red onion. Drizzle with the yogurt sauce.

  3. 8

    Serve

Wrap the pita around the filling and serve immediately. Enjoy your delicious Genie's Gyro!
