Base Preparation

    Heat Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk the egg yolks and granulated sugar together until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the hot milk and cream mixture into the egg yolk mixture while whisking continuously. This process tempers the eggs and prevents them from scrambling.

    Cook Custard

    Pour the combined mixture back into the saucepan. Cook over medium-low heat, stirring constantly with a wooden spoon until it thickens and coats the back of the spoon (about 5-7 minutes).

    Cool and Flavor

    Remove from heat and stir in the vanilla extract. Allow the custard to cool to room temperature, then refrigerate until completely chilled (at least 2 hours).

    Decide on the flavor you want to make. For chocolate gelato, add cocoa powder to the cooled custard mixture. For fruit flavors, fold in the pureed fruit. For nut flavors, mix in the chopped nuts or mint leaves.

    Pour the flavored custard into an ice cream maker and churn according to the manufacturer's instructions until it reaches a thick, creamy consistency.
