Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading Mixture
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Bread the Calamari
Dip each calamari ring first into the egg wash, then into the flour mixture, ensuring they are well-coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, frying them for about 2-3 minutes or until golden brown. Remove and drain on paper towels.
Marinara Sauce

Cook the Garlic
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir well.

Simmer the Sauce
Lower the heat and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Add Fresh Basil
Stir in the fresh basil just before serving.
