Falafel Preparation

    Soak Chickpeas

    Place the dried chickpeas in a bowl and cover them with water. Let them soak overnight or for at least 8 hours.

    Make Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and black pepper. Process until the mixture is coarse and holds together when formed into a ball.

    Form Falafel Balls

    Transfer the mixture to a bowl and stir in the all-purpose flour. Shape the mixture into small balls or patties, about 1.5 inches in diameter.

    Fry the Falafel

    Heat the vegetable oil in a deep pan over medium heat. Once the oil is hot, carefully drop the falafel balls into the oil in batches. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Cook Basmati Rice

    In a saucepan, combine the basmati rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.

    Chop the cucumber, tomato, and red onion into bite-sized pieces. In a bowl, combine the chopped vegetables with lemon juice, olive oil, salt, and black pepper. Toss to combine.
