Peeling and Cutting Potatoes
Peel the russet potatoes using a vegetable peeler. Cut each potato into thin fries, about 1/4 inch thick. Try to keep them uniform in size for even cooking.

Soaking the Potatoes
Place the cut fries into a large bowl filled with cold water. Let them soak for at least 30 minutes to remove excess starch, which helps achieve crispiness.

Draining and Drying
After soaking, drain the fries and pat them dry using a clean kitchen towel or paper towels. It’s important to remove as much moisture as possible.

Seasoning
Sprinkle the dried fries with salt and toss gently to ensure they are evenly coated.

Heating the Oil
In a large, heavy pot or deep fryer, pour in the vegetable oil. Heat the oil to 350°F (175°C) over medium-high heat. Use a thermometer to ensure the oil reaches the correct temperature.

Frying the Potatoes
Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pot. Fry them for about 4-5 minutes or until they are golden brown and crispy.

Use a slotted spoon to remove the fries from the oil and transfer them to a plate lined with paper towels to drain excess oil. Season with additional salt if needed.
