Falafel Sandwich Recipe

Falafel Preparation

Soak the Chickpeas
In a bowl, soak the dried chickpeas in water for at least 8 hours or overnight. Drain and rinse before using.

Make the Falafel Mixture
In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and baking powder. Pulse until the mixture is coarse but well combined. Add water a tablespoon at a time if the mixture is too dry.

Form Falafel Patties
Using your hands, form the mixture into small balls or patties, about 1-1.5 inches in diameter. Place on a plate and refrigerate for at least 30 minutes.

Assemble the Sandwich
Take a piece of pita bread and open it to create a pocket. Fill it with a few falafel patties, followed by lettuce, tomato slices, cucumber slices, and a generous drizzle of tzatziki sauce.

Serve the falafel sandwiches immediately while warm, with extra tzatziki sauce on the side if desired.
