Falafel Preparation

    Soak the Chickpeas

    In a bowl, soak the dried chickpeas in water for at least 8 hours or overnight. Drain and rinse before using.

    Make the Falafel Mixture

    In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and baking powder. Pulse until the mixture is coarse but well combined. Add water a tablespoon at a time if the mixture is too dry.

    Form Falafel Patties

    Using your hands, form the mixture into small balls or patties, about 1-1.5 inches in diameter. Place on a plate and refrigerate for at least 30 minutes.

    Fry the Falafel

    In a deep skillet or pot, heat vegetable oil over medium heat. Once hot, fry the falafel patties in batches for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

    Prepare the Vegetables

    Wash and slice the lettuce, tomato, and cucumber. Cut the tomato and cucumber into thin slices.

    Assemble the Sandwich

    Take a piece of pita bread and open it to create a pocket. Fill it with a few falafel patties, followed by lettuce, tomato slices, cucumber slices, and a generous drizzle of tzatziki sauce.

    Serve

    Serve the falafel sandwiches immediately while warm, with extra tzatziki sauce on the side if desired.
