Falafel Salad Dinner Recipe
A mixture of fresh romaine lettuce, tomatoes, cucumber, Kalamata olives, raisins and feta cheese. Served with Greek salad dressing and topped with falafel.

Prepare Salad Base

Chop Vegetables
Wash and chop the romaine lettuce into bite-sized pieces. Dice the tomatoes and cucumber into small cubes. Set aside in a large bowl.

Add Other Ingredients
Add Kalamata olives, raisins, and crumbled feta cheese to the bowl with the chopped vegetables. Mix gently to combine.
Make Falafel

Prepare Chickpeas
Drain and rinse the canned chickpeas. Place them in a food processor.

Blend Ingredients
Add fresh parsley, garlic cloves, cumin powder, coriander powder, baking powder, and salt to the food processor with chickpeas. Pulse until the mixture is finely chopped, but not pureed.

Form Falafel Balls
Using your hands, form small balls (about 1 inch in diameter) out of the mixture and place them on a baking sheet.

Fry Falafel
Heat oil in a skillet over medium heat. Fry the falafel balls in batches until golden brown on all sides, about 4-5 minutes. Remove and drain on paper towels.
Prepare Greek Salad Dressing

In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, and black pepper until well combined.
Assemble the Salad

Combine Salad and Dressing
Pour the Greek salad dressing over the salad mixture and toss gently to ensure even coverage.

Add Falafel
Top the salad with the freshly fried falafel balls. Serve immediately.
