Method

Preparing the Falafel

    Soak Chickpeas

    If using dried chickpeas, soak them in water overnight. If using canned chickpeas, rinse and drain them well.

    Blend Ingredients

    In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

    Add Flour

    Transfer the mixture to a bowl and stir in the flour until just combined. Cover and let it rest in the refrigerator for at least 30 minutes.

    Form Balls

    After resting, scoop about 2 tablespoons of the mixture and form into balls or patties.

    Heat Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

    Fry Falafel

    Carefully place the falafel balls into the hot oil, frying them in batches for about 3-4 minutes on each side until they are golden brown and crispy. Remove and drain on paper towels.

Making the Tahini Sauce

    Combine Ingredients

    In a small bowl, whisk together tahini, lemon juice, minced garlic, water, and salt until smooth. Adjust the consistency with more water if necessary.
