Preparing the Meat

In a large bowl, combine the ground lamb and ground beef. Add minced garlic, chopped onion, dried oregano, cumin, salt, and black pepper. Mix until all ingredients are well combined.

Shape the Mixture
Form the meat mixture into oval-shaped patties or logs, about 1 inch thick.

Cook the Meat
Heat olive oil in a skillet over medium-high heat. Add the meat patties and cook for about 4-5 minutes on each side, or until browned and cooked through. Use a meat thermometer to ensure the internal temperature reaches 160°F.
Assembling the Gyros

Prepare the Pita
While the meat is cooking, warm the pita bread in a dry skillet or in the microwave for about 10-15 seconds until pliable.

Layer the Ingredients
On each open-faced pita, layer shredded lettuce, diced tomato, diced cucumber, sliced olives, and crumbled feta cheese.

Once the meat is cooked, slice it thinly and place it on top of the layered toppings on the pita.

Drizzle tzatziki sauce over the assembled gyros before serving.
