Method
Chicken Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts on both sides with salt and black pepper.
- 2
Bread the Chicken
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and Parmesan cheese. Dip each chicken breast first in flour, shaking off the excess, then in the egg, and finally in the breadcrumb mixture, pressing lightly to adhere.
Topping and Cooking
- 3
Fry the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, until golden brown and cooked through.
- 4
Assemble the Dish
In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken breasts on top, then spoon more marinara sauce over each breast. Lastly, sprinkle mozzarella cheese on top of the sauce.
- 5
Bake
Bake in the preheated oven for about 20-25 minutes or until the cheese is bubbly and golden.
- 6
Serve
Remove from the oven and let it cool slightly. Garnish with fresh basil if desired. Serve hot with pasta or a side salad.
