For the Chicken Kebabs

Marinate the Chicken
In a large bowl, combine olive oil, garlic powder, paprika, cumin, salt, black pepper, and lemon juice. Add the boneless chicken thighs, ensuring they are well coated in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes, preferably 2 hours.

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated chicken onto the skewers, about 4-5 pieces per skewer.

Prepare the Cucumber
Grate the cucumber and squeeze out excess moisture using a clean kitchen towel or cheese cloth.

Mix the Sauce
In a bowl, combine Greek yogurt, grated cucumber, minced garlic clove, dill, olive oil, salt, and black pepper. Mix well until all ingredients are combined. Refrigerate until ready to use.

Assemble the Sandwich
Warm the pita bread slightly on the grill or in a pan. Place lettuce leaves on each pita, followed by sliced tomato and cucumber. Add 2-3 chicken kebabs on top and drizzle generously with tzatziki sauce. Fold the pita over to enclose the fillings.

Serve the chicken kebab sandwiches immediately with extra tzatziki sauce on the side.
