Marinade Preparation

Make the Marinade
In a large bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, black pepper, and dried oregano. Mix well until all ingredients are combined.

Marinate the Chicken
Add the cubed chicken breast to the marinade. Ensure the chicken is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for better flavor.

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.

Assemble the Kebabs
Thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating between chicken and vegetables. Each skewer should have about 4 to 5 pieces of chicken and vegetables.

Grill the Kebabs
Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is fully cooked (internal temperature of 165°F/75°C) and the vegetables are tender.

Remove the kebabs from the grill and let them rest for a few minutes. Serve the kebabs in warm pita bread, garnished with fresh chopped parsley.
